AUTUMN 2008 RECIPE
CABBAGE, GOAT CHEESE AND POTATO LOAF
Serving 6-8
INGREDIENTS :
- 1 kg potatoes
- 2 big semi-dry goat cheeses (about 300g)
- 1 cabbage
- 30 cl sour cream
- 1 tbsp baking soda
- Salt and pepper
RECIPE :
- Wash 8 nice large cabbage leaves. Let them cook for a few minutes in boiling water with salt and baking soda.
- Peel the potatoes and steam them.
- Pre-heat the oven to 180°C (350 degree F ) Dress a loaf pan with 6 of the cabbage leaves and let them overflow from the pan.
- Cut the potatoes into slices. Put half of them onto the bottom of the pan, over the cabbage leaves. Cover with 15 cl sour cream.
- Crumble the goat cheese on the cream. Sprinkle with salt and pepper. Add the remaining potatoes and cover with sour cream (15 cl). Sprinkle again with salt and pepper. Cover with the 2 remaining large cabbage leaves and the compress.
- Cover the loaf with parchment paper and then an aluminium foil (so that the cabbage leaves do not burn) before putting the pan into the oven.
My advice
- Taste it, just warm or cold, with a green salad.
